Working with Chef Dan of Island Thyme gourmet was a wonderful experience, I decided to
try his personal chef services when I was extremely busy at work, I had several food restrictions therefore eating out was out of the question. Chef Dan rose to the challenge and created a menu of meals that was out of this world. I couldn't believe I was eating "healthy",
it tasted too gourmet! I think he was ingenious when he created a nondairy based béchamel sauce for his fantastic moussaka. A Greek coworker sampled it and declared it tasted "authentic". I also loved his Chicken Cacciatore with Sherry, mushroom and artichoke hearts. It was such a luxury to come home and eat a healthy gourmet meal after an incredibly busy day. Chef Dan is personable and truly is interested in providing for your tastes and needs.
You will have no regrets!

Chef Dan's version of the traditional turkey dinner was not only delicious, it was one of the best meals we've ever eaten, in or out of a restaurant. The bird was roasted beautifully and
it was so moist. The rest of the meal was just as amazing and special mention goes to the brussel sprouts. After a traumatic childhood incident, I swore never to touch them again but Chef Dan's recipe and preparation has changed my mind. We hope he will come cook for us again next year!

Chef Dan and Clare are a delight. They joined our family at our vacation home for a fabulous
4-course dinner, as well as a night of laughter and fun. Throughout our meal, Chef Dan introduced us to some of Hawaii's best seafood and produce, prepared to bring out the best island flavors, while Clare served as a fabulous host, waiter and cultural guide. Our house
had an open kitchen, so we were fortunate to get to spend the evening with them as they cooked, asking questions about the food and getting to know one another as the night progressed. It was a comfortable and fun evening, and the best meal we had during our entire stay on the Big Island. Thanks Dan and Clare for a memorable highlight to our vacation!

Chef Dan has cooked for me and my family quite often when we are on the Big Island. He has done everything for us from pupus for a cocktail party to five course dinners for a special birthday-and always to rave reviews. He even made his wonderful Short Ribs and packaged them “to go” for me to take to a potluck at home in Boston! (They were the hit of the party!)
He and his wife Clare, who often comes along to serve, are warm and friendly and full of
aloha spirit. I can recommend their service without hesitation.
